One of the many microlots we purchased from this years harvest. This one is from Kerehaklu estate. They lovingly named this one "The Monitor Washed".
Contemporary style, medium-light roast profile boasts of sparkly, citric-berry acidity that leads into a deep, sweet-caramel aftertaste. Designed for pour-overs and juicy, long-ratio, modern espressos.

Process: Sequential anoxic fermentation in ambient conditions of shade, aeration and regular mixing. Lactobacillus bacteria inoculant added after step one of sequential ferment. Drying for 11 days in parabola.
