It all started when Mr. Satyendran, the man behind Thipperary Estate, dropped into the roastery for a visit. We brewed some coffee, got to talking, and that conversation led to him sending over a few samples. The moment this AA-graded S795 lot hit our cupping table, the hunt was over. It was an immediate, unanimous \"yes.\"\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003ePerched up at 1,400 meters in the beautiful Shevaroy Hills of Yercaud, Thipperary is a stunning, century-old estate currently run by the Nachiappan family. It has some wild history attached to it—the property’s main colonial bungalow was actually built back in 1900 by relatives of Charles Dickens! But beyond the trivia, it’s their uncompromising dedication to sustainable, chemical-free farming that commands our absolute respect. Pulling off coffee of this caliber without relying on synthetic fertilizers takes immense patience and a deep understanding of the land. The industry is clearly paying attention, too: they just bagged a Top 5 nomination for Washed Arabica at the 2026 Fine Cup finals. One sip makes it obvious why—there are no wild, boozy ferments masking the bean here, just pristine, careful processing that lets the Shevaroy terroir do all the heavy lifting.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eWhile you all know we generally lean hard into light, transparent profiles, this specific coffee basically demanded a different approach. We pushed this one into a solid medium roast to fully develop a massive, decadent chocolate backbone and a deeply nostalgic, sweet \"mithai\" like sweetness.
