This year we had the opportunity to sample a fair few Ethiopian coffees from various coffee producing regions. We chose only three - this natural stood out for its clean yet intensely complex floral, fruit forward, Guji signature.
Nestled in the sky-high Buku Sayisa kebele of Ethiopia's Guji Zone, this coffee comes from smallholder Oromo farmers who've made coffee a way of life for generations. Most have just a handful of trees, but they deliver their ripe cherries to the station where the magic begins
This lot starts with hand-sorted cherries floated in water tanks to skim off any floaters. Then, the whole cherries hit raised beds made of bamboo reeds and cloth for adequate airflow, drying slowly over 2-3 weeks under careful turning and defect-picking. No shortcuts here; it's all about letting those natural sugars ferment and develop that bold, berry-forward profile without a hint of off notes.
What makes this coffee special is how it lets us push our light roasting obsession—defects hide nowhere in a transparent roast; this one's meticulous prep keeps it clean and vibrant. We roast it fast and bright to amp up the floral accents and the plump berry acidity - perfect for crisp, tea like filter brews.
