Melkodige Estate x G-shot association is not a surprise for most of our regulars. As many of you know, we are head over heels about them. The people behind this estate are coffee wizards, and the coffee they produce is their love language. Over the years, we have purchased many different coffees from them, which you might have seen listed on our website. However, this is the first time we co-created a micro-lot with them.
This lot was born from long chats with Aveen around various ways in which the fruit flavours of the coffee can be accentuated while maintaining a clean-cup profile. We wanted to create a process to accentuate the already beautiful Sln. 9 coffees rather than layer them with extreme “process flavours.”
Equipped with our extensive multi-year sample cupping notes describing processes and their associated flavour outcomes, along with Aveen’s practical, grounded understanding of all things coffee, we came up with an elegant solution. We decided that an anaerobic fermentation with a combination of specific strains of Pichia yeast, followed by lactobacillus bacteria fermented while monitoring the pH as a control metric, and then drying the fermented fruit on raised beds, would hopefully do it! Ripe cherries submerged under water and inoculated sequentially with specific Pichia yeast and Lactobacillus strains, followed by a 74 hour ferment. 15 days drying on raised beds.
When we cupped the samples, at first we missed the subtlety! But once we got the roast right, we couldn’t get enough. It’s everything we hoped for, and more. We can’t wait to work on tweaking this process further during the 2025–26 harvest. This definitely marks the beginning of a journey demonstrating how producers and roasters can work together to create something phenomenal.
The phrase that comes to mind to describe this coffee instinctively is : “ The art of subtle”. A classic, no-funk , natural topped with distinctive fruit notes and pleasant malic acidity, all coming together is an extremely balanced cup that we can’t get enough of. We are roasting this on the lighter end of the spectrum such that roast notes don’t dominate but simply support the intrinsic beauty of this coffee. Brew it with an aeropress, pop it into your v60 pourover, stuff your portafilter with it – this versatile coffee simply delivers.
