Down in Honduras, the team at De La Finca shook things up a few years back when tough times hit. Instead of sticking with the usual routine of turning lower-grade washed coffees into decaf, they took a chance on their premium honey-processed beans from local growers in Marcala. Shipping them off for that special water decaf treatment turned out to be a winner—folks at the processing spot couldn't believe how good it tasted, almost like it wasn't decaf at all. It's been flying off the shelves ever since, and it even grabbed first place in a major North American coffee contest for decafs.
Ripe cherries go through honey processing to lock in natural sugars around the bean, then head to Mexico for a clean water-based decaffeination using spring water from Pico de Orizaba—no chemicals involved, keeping things pure and organic.
This standout lot from De La Finca brings a fresh twist to decaf, blending bright fruitiness with cozy sweetness in every cup. We roast it to a medium light level, right around that sweet spot, just after the first crack to highlight its creamy texture yet retain the fruity acidity. This is one of the few decafs we have ever roasted keeping manual brew methods in mind. However, if you know what you are doing this coffee makes an absolutely smashing espresso and mean milk-based beverages.
