We absolutely love roasting coffees light – anyone who knows anything about us , knows this! However, not every coffee lends itself very well to this transparent roast style. Defects tend to stand out just as much as the intrinsic goodness of the bean. This coffee lets us showcase our roast style thanks to the meticulous harvesting and processing practices at the farm.
We cupped numerous samples, that Sharan from Salawara estate, kindly shared with us this year. Lot no. 1418 immediately stuck out for its juicy grape-like acidity. We are roasting this coffee to accentuate this aspect while bringing out the inherent sweetness and fruity flavours.
This coffee has an interesting “processing method” that focuses on developing flavours using microbes intrinsic to the estate. Since generations, Sharan and his family have been making fruit wines using a starter they maintain year on year at the estate. This year they decided to use this starter culture to inoculate a batch of coffee. Once inoculated, the coffee was fermented anaerobically for 72 hours and then shade dried for 12 days.
